    Traduction en anglais : Epidemiological surveillance of toxiinfection outbreaks and food safety in food-service facilities.

    The study and valuation of the food-borne disease data provided by the environmental health departments are very useful for an efficient design of the safe food systems based on the Hazard Analysis Critical Control Point (HACCP) risk assessment.

    Epidemiological data on the food-borne disease outbreaks in the Comunidad Autonoma de Madrid and in the whole of Spain over the last 8 years have been collected and compared with those from other geographical areas abroad, in order to made them available for their use in the risk assessment methods in food-service establishments.

    The insufficient cleanness and disinfection and, in general, the temperature related deficiencies stand out as the main contributing factors involved in outbreaks.
