Traduction en anglais : Microbiological quality of food from university restaurants.
Over four thousand and five hundred menu are daily served in the Universitat Autònoma de Barcelona restaurants.
Between 1990 and 1995,962 samples of ready-to-eat food from different restaurants were collected and analyzed.
The aim of this study was to assess the microbiological quality of food during those years, and the importance of a periodical program of food safety.
The results found revealed that the microbiological quality of food is quite acceptable, with a low incidence of pathogen microorganisms.
Moreover, the food safety program has improved the microbiological quality of food.
