The ARICPC programe was initiated in 1995, by the Health Department of Sabadell City Council, having as its target population collective dining areas and retail food outlets within the city.
The working system was based on the following : - Initial inspection of the establishment based on the identification and evaluation of possible sanitary risks. - Control of the food handlers, utensils and work areas, using contact plates.
Two samples were taken with the objective leaving one in power of the inspected establishment.
Collection of the samples for posterior analysis.
Laboratory analysis of the samples obtained.
Return visit of the health inspector to revise the results of the contact cultures in power the establishment.
Final evaluation of the results and introduction of preventative measures in critical points.
Setting up of control procedures and auto-control of the critical points.
Evaluation of the efficacy of the measures applied.
